Have you ever wondered how some bakers are able to keep their whipped cream frostings in shape even after hours at room temperature?
The secret could very well be Snow – Tebeemini Corporation’s Non-Dairy Whipping Cream. It is a non-dairy whipping cream that is very stable when whipped, and will not melt even if left at room temperature for several hours. It can quadruple in volume when whipped, meaning 1 liter of Snow can produce around 4 liters worth (by volume) of whipped cream. If you are a commercial baker, or even a home baker with a sideline business, you might want to look into using Snow.
Last November 7, Tebeemini Corporation held the first ever TBMN’s SNOW: THE ART OF PASTRY MAKING event at Galastar Culinary School. It was nice to see the Gala school again! I took a few half-day courses there decades ago, when it still looked like a house!
The event invited several chefs to create wonderful pastries using Snow Non-Dairy Whipping Cream. The Challenge of the Event was to use at least 240ml (1 cup) of Snow non-dairy whipping cream to create their wonderful recipes. Basic kitchen equipment and ingredients were provided to all participants. Lastly, all 7 Chefs were given a time limit of 1 hr and 30 minutes to finish their recipes!
Tebeemini Corporation, the exclusive distributor of SNOW in the Philippines also invited 4 evaluators namely: Chef Ernest Gala, Chef Allen Camacho, Chef Dandyllon Dumillon and TBMN President Teddy Ong to first-hand experience, evaluate and taste all 7 promising recipes.
Here are the chefs cooking up a storm!
Here are their creations:
1. Chef Gabbi Flores – Chocolate Tart
2. Chef Leonor Chua – Suprise Cookie Cake
3. Chef Chris Evert Enriquez – Fruity Vanilla Cake
4. Chef Kathrine Donila – Fruit Basket and BanaCara Cream Crunch
5. Chef Mary Anne Ramos – Strawberry Panna Cotta with Strawberry Chantilly
6. Chef Roxanne Almendral – Almond Blueberry Cake
7. Chef Wren Go – Lemon Custard Pie
Some of these chefs accept orders, work at restaurants, or are planning to open up their own shops! I wasn’t able to get everyone’s contact details, unfortunately, but I’ve linked to those I have above.
Chef Gabbi Flores was the overall winner with her Chocolate Tart!
Chef Kath Donila with her Fruits Basket and BanaCara Cream Crunch:
Chef Mary Anne Ramos was even able to make a rosette from Snow Non-Dairy Whipping Cream! That shows how stable the product is.
So, how is the taste of Snow Non-Dairy Whipping Cream? It is slightly sweet by itself, so you won’t need to add much confectioner’s sugar to sweeten it. Personally, I will always prefer the taste of dairy whipping cream, however, I won’t hesitate to use Snow for those times when I need very stable whipped cream. For commercial purposes, this is definitely something to consider.
For home bakers, consider using this whenever you need your desserts / frostings / toppings to maintain their shape without refrigeration – for example:
- taking dessert dishes to potluck dinners
- picnics
- bake sales
- giveaways
HOW TO USE / INSTRUCTIONS
Snow Non-Dairy Whipping Cream is sold frozen. In its frozen state, you can keep this in your freezer for up to 2 years. To use, you need to thaw it out in your refrigerator for 24 hours before using. Once it is opened, keep it refrigerated, and you need to use it up within a few days.
To whip, preferably have Snow Non-Dairy Whipping Cream cold from the refrigerator and whip as normal. Snow whips quickly. Once whipped, it can maintain its shape even at room temperature, for a few hours, but of course, it is much preferable to have it kept refrigerated.
