What is a fondue?
From Wikipedia: Fondue is a Swiss melted cheese dish served in a communal pot over a portable stove heated with a candle or spirit lamp, and eaten by dipping bread into the cheese using long-stemmed forks.
Fondue at Old Swiss Inn
For decades, Old Swiss Inn has been known for their pork knuckles and fondues. Pre-ECQ, I was able to try their fondues, which I thoroughly enjoyed!
The Old Swiss Inn I went to is located in Makati. Their original branch is in Paco, and my dad told me that he used to go there with his friends for pork knuckles. Anyway, one thing I like about Old Swiss Inn Makati is that they are open 24/7 (pre-ECQ) and is a nice haven when you have the munchies in the wee hours of the morning. They do have parking available for guests (building parking) but it’s limited, so don’t expect to be able to get a slot unless you’re visiting at odd hours.
We ordered the Fondue Smorgasbord Set (P3,000+).
The meal started with some salad. Let’s try to start healthy and then progress to decadence
And then, happily, we’re on to the fondues! The fondues are good for 2.
Waatlander Fondue (Swiss Cheese Fondue) – appetizer
This is the classic cheese fondue. Gruyere and Emmental cheeses are melted with a little bit of kirsch (cherry liquor) in a pot. The liquor serves to thin out the cheese so it’s not too thick. It is served with a basket of cubed bread.
All the fondues are served with fondue forks (long, thin, metal skewer forks to stab the food with).
The bread is just an excuse to eat the cheese! Hahaha. If you love cheese, you will totally love this cheese fondue. They use real cheeses. It’s so good we used the bread to mop up everything ๐
Fondue Bourguignonne (Beef Fondue) – main
This one is a meat fondue – specifically, they use Prime Beef Tenderloin
The fondue is served on this wrought iron stand with the cooking pot in the middle, and the 12 sauces/condiments on the side. You can spin the sauce wheel to reach the different sauces ๐
The cooking pot is filled with oil – you take a piece of beef and fry it in the oil to your desired doneness.
My favorite sauces were the mushroom, peppercorn, horseradish and sweet mayo. We tried to savor our meal slowly because we didn’t want this to end! ๐
Toblerone Chocolate Fondue – dessert
And now, finally, dessert! It’s a chocolate fondue that is made by melting Toblerone chocolate – it’s really Toblerone, including the nougat bits. We were asked if we wanted milk chocolate, dark chocolate or white chocolate. We chose milk chocolate.
Handmade marshmallows, cubed pound cake, and fruits like mangoes and apples were also served to dip into the chocolate.
Although it was just a simple dessert of creamy and sweet melted chocolate, it still satisfied my dessert desires! I mean, who doesn’t love eating melted chocolate? Again, the fruits and whatever were just a vehicle for me to get as much chocolate as I could into my mouth, hahaha. Be careful though, as the chocolate is still hot. Let it cool down for a few seconds before eating.
So we started with some salad, then had the cheese fondue, then the beef fondue, and ended with the dessert fondue – we were actually quite full after our meal. To be honest, we didn’t expect to be. To the eye, the servings may seem small, but if you add them all up, they’re actually quite filling. More importantly, they were delicious – you can tell that they use quality cheese, beef and chocolate (Toblerone).
The presentation is very classic – timeless, even. I was impressed by how many sauces they included with the beef!
If you love how interactive you are with your food when you do samgyupsal at home, this is pretty much the same, except it’s fancier! In fact, fondue was being promoted as the Swiss national dish in the 1930s, and was quite popular in North America in the 1960s.
