A few weeks ago, I was invited by my friend Xander to tour Moderne Culinaire Academy.
The event was actually to announce that Moderne Culinaire Academy (MCU) has partnered with 2 universities in Malaysia – the prestigious KDU University College and Berjaya University College of Hospitality in Malaysia.
HOW WILL THE PARTNERSHIPS BENEFIT STUDENTS?
Both of these universities are highly-renowned for their culinary programs, and through these partnerships, every MCU student can now include them in their journey towards being a successful professional in the culinary and hospitality industry.
Students enrolled under MCA’s Higher Diploma in Culinary Arts and Kitchen Management program now have the option to go to Malaysia after their two-year certificate course and continue their studies further on either campus. Upon completion of the additional two years, they will be rewarded with a Bachelor’s Degree in Culinary Arts Management while adding another year would allow them a Master’s Degree.
The programs cover a high level of business entrepreneurship training (with classes on marketing, accounting, and operations) alongside intense hands-on learning (butchery, pastry- and bread-making) — education perfect for aspiring executive chefs and restaurateurs.
“We here at MCA take pride on helping our students become the best in their chosen field,” MCA’s Academic and Administrative Head Jester Ong Chuan shares. “This partnership only strengthens that belief since KDU and Berjaya are known to have the best culinary and hospitality programs in Southeast Asia. This will open a lot of doors for them.”
CUPCAKE DECORATING
We started with a cupcake decorating class taught by Chef Markus Elegino of Markus Patisserie and Bistro (The Boy Who Bakes). He also teaches at MCU.
Each of the guests took turns piping out some Swiss buttercream and decorating our own cupcakes. Thank you for this hands-on experience, I now feel more confident to do more cake decorating at home

TOUR OF THE MCU FACILITIES
After our hands-on cupcake decorating, we were given a short tour of the school. Moderne Culinaire Academy is located in a new-looking, long, narrow building. There’s parking available and there’s a guard to assist.
The first floor has the reception area and classrooms.

Dinner was an international affair, with dishes showing what MCU students can do. The set-up was so pretty and romantic!
Appetizer – Maui Ahi Tuna Poke – marinated tuna in soy sauce and sesame oil on avocado
Salad – “Yam Sam O” – authentic Thai pomelo salad in a basket
Soup – Bouillabaisse – traditional French seafood stew of Provence
Main Course – Cuisses de Poulet Farci Aux Marsala – stuffed chicken leg with Marsala sauce
Dessert – Purple Yam Cheesecake

Moderne Culinaire Academy is located near TESDA. Coming from the Makati side of South Super Highway, on the East Service Road, just right after TESDA, turn left into Diego Silang Avenue. There’s a gate going to the AFPOVAI. After going through the guard, just continue on the same street until you reach MCU.
